Cafe fitouts usually have a hard deadline with an opening date planned.
The fitout is scheduled to meet the date and often the electrical often gets squeezed into whatever time is left. The problem is that a commercial kitchen has a specific electrical scope that can’t be rushed without consequences, and getting it wrong means either failing the inspection or having equipment that doesn’t perform correctly once you open.
Here’s what a standard cafe electrical fitout actually involves.
Espresso machines, particularly two-group commercial machines. They need a dedicated three-phase circuit. A pizza oven or commercial combi oven needs its own circuit sized for the draw. Exhaust hoods with gas appliances underneath need a gas interlock wired so the hood activates before the gas can be turned on.
This is a compliance requirement, not optional. Refrigeration needs dedicated circuits. The switchboard needs to handle the combined load of all of it without tripping under peak service conditions.
The other thing that catches operators out is the state of the tenancy’s existing switchboard. If the previous tenant was a long term and not in hospitality, the switchboard typically will be patched to try and extend it’s life time. We assess the existing installation before quoting the fitout, not after the coffee machine has been ordered and delivered.
